Dragees began life as spices that where enclosed in a layer of sugar to maintain their aroma and flavor. The shape of the almond, pine nut or pistachio is set in this nubbly shell which looks a bit like coral. Only small amounts of this Dragees can be made at a time due to the difficulty making them even more precious with their soft melt-in-the-mouth consistency.
